For this, it will have required rare optimism, absolute courage and an exceptional capacity for work carried by a conviction anchored in the body: we must put the human being at the heart of any project. “Everything we create, we do it as a team, with others. It is therefore impossible to say that it belongs to a single person! says Alessandra, taking the example of her new table, Nosso. A glass vessel open to the 13th arrondissement , Nosso is a family where we rebuild ourselves, where we grow up, where some participate in the capital so as "not to leave with nothing after a few years", explains the chef who even took a additional work during the health crisis to guarantee the payment of the salaries of his team.
Among Alessandra's obsessions is also the waste that she wants to minimize. At Nosso, the bin is the size of a wastepaper basket. And that is enough. The secret ? Recycle everything, reinvent everything, sublimate everything from one service to another. Alessandra imagines, modifies, rethinks non-stop her circuits and recipes to waste as little as possible. Alessandra also gives her time and energy through associations. A dinner to help Afghan women? A soup kitchen? She responds present, eager “to give back to all that life has given me”.
